Cake and other things...

on Tuesday, August 13, 2013

Today I woke up with an insane urge to make cake, so I didn't have any other option than to hop to it! I decided to make things a little more interesting by mixing the cake batter with a little food dye to make it pastel pink. In for a penny, in for a pound after all! They're a little reward for us both as we've been working quite a lot the past couple of days on a few new bits and pieces for the shop. Actually, we have a whole new product on its way (eeep! So exciting! Updates soon...) But we've also been making some little stickers and fliers to brighten up the orders placed in our shop. I can't wait till they arrive and we can stick them all over the place!

We've also updated our blog 'about us' page and have started to update our Etsy/Storenvy/Society6 shops which is nice. My camera is away getting fixed from the lens breaking on our holiday (thanks to a very kind Dad who came to the rescue!), so we're hoping to reshoot our stock with the new packaging and all that good stuff as soon as I get it back. With our new website very close to launching, we've got a few final things that need tidied up to make it look as sharp as possible :) Exciting times, huh!

Oh! I'm hoping to be sorting out our DIY posts so they land on a Monday again too. They got jumbled up to different days when we went away and it's starting to do my head in. Monday or Thursday? Which day would you rather see our DIYs go live?
We'd love to hear what you think :)

DIY: Malted Chocolate Honeycomb Marshmallows

on Friday, June 21, 2013

It's been quite some time since we've posted a recipe, but as this was a special gift from the lovely Miss Kim of Peaches & Pebbles, I couldn't resist sharing my new favorite sweet treat with you all! Making marshmallows is something I've wanted to try for quite some time, but I've always been reluctant to do so as I thought they would turn out a disappointment. This surprise book from Kim really inspired me, especially when I saw there was Malted Chocolate Honeycomb Marshmallow to be had!

To make a batch of these, you'll need to make a batch of plain marshmallows and add all the flavouring towards the end:

Plain Marshmallow Ingredients:
8 sheets leaf gelatine, 2 egg whites, 500g granulated sugar, 250ml cold water

Malted Chocolate Honeycomb Ingredients:
6 tablespoons malted chocolate powder (like Ovaltine), 6 tablespoons boiling water, 250g chocolate covered honeycomb sweets (eg: Maltesers or Whoppers)

You'll also need:
a good electric whisk, a heavy-based pan, a small baking tin, parchment paper (cut so you will be able to lift the marshmallows out of the tin), 2 tablespoons of icing sugar and 2 tablespoons of cornflower.

How To:

Begin by prepping your baking tin, by lining it with the parchment paper. To make sure the marshmallows don't stick, mix the icing sugar with the cornflower in a bowl. Spoon this into the made up tin and tap it around the base and sids so the dust is sticking evenly. This combination is what's dusted over all marshmallows :D

Once that's done we can get stuck in!

Add the gelatine sheets into a bowl of cold water, one at a time so they don't stick, and set aside to soften.

Pour the egg whites into a clean bowl and using your mixer, whisk on high until they hold stiff peaks. Set aside.

Put the sugar and water into the pan and warm over a low heat and stir till the sugar has completely dissolved. I don't have a sugar thermometer, but if you do you'll want to add it in now, then bring the sugar to the boil. Allow it to bubble away undisturbed for around 10-15 minutes (until the temp reads 122 degrees Celsius).  I didn't have that luxury, but the way to check if the sugar syrup is ready is to take a small teaspoon of the liquid out of the pot and pour it into a glass of cold water. If the syrup forms a firm "toffee-ish" ball that holds its shape, it's done :D Start doing this test after 10 minutes of boiling. And, just so you know, the sugar should be clear, not brown - you don't want burnt marshmallows! Once it' ready, take the thermometer out of the pan and pop it somewhere safe to cool down.

Whilst the sugar is cooking, you'll have time to make the flavouring. Do this by mixing the malted chocolate powder with the hot water so it forms a thick paste and set it aside. Smash up your chocolate sweets with a rolling pin, making sure you leave lots of big chunks. Yum yum!

Ok, now everything is ready to go... Hold onto your hat's!

Start mixing up your eggs again on a low speed again and slowly pour in the hot sugar syrup, mixing continuously as you pour. As soon as it's all added, increase the speed to maximum.

Remove the gelatine from the cold water, give them a squeeze dry, and drop them into the mixer. Combine them in and whisk on high speed for 10 minutes. It's ready when it's thick, shiny and almost pourable.

At this stage you can pour in your malted paste and whisk on high speed til it's fully combined. Pour in just over half of the smashed candy and gently fold it into the mixture. When you're ready, pour it all into your tin and tap the sides a couple of times so it's all level.

Sprinkle on the rest of the candies and lightly press them a little into the marshmallow.

The last thing you need to do is pop them in the fridge and wait 4 - 6 hours (or overnight if you can stand it!) till they're set...

***

Woohoo! Now you have some delicious gourmet cupcakes to show off to your besties... if you don't eat them all first :D

We hope these marshmallows make you as happy as they did us :) They're just so delicious and easy to make you'll never want to stop!

Thanks again to Peaches & Pebbles and the wonderful book Marshmallow Magic for this tutorial inspiration...

Happy Eating!

Sweet Treat Of The Month...

on Friday, March 29, 2013

This month has been so freaking cold that you'd think it was December. That's why our sweet treat of the month had to be something stodgy and homely. Something Brilliantly British... The Flapjack of course! These bad boys have seen us through some hard times. We've been working hard on redecorating a flat which has taken up many of our hours, meaning we needed a treat that meant business. There is nothing the flaper-jacker cannot do, hee hee! These are as easy to make as they are to eat; oats, butter, sugar, golden sirup and some yummy raisons. Good, honest and not a wholly unacceptable breakfast option.
We owe March to you Flapjacks; thanks for being there through thick and thin :) Yum yum!

These are actually really easy to make as you just need a solid biscuit recipe, some cute cutters and a jar of your favorite jam. I love these because you can customize the shapes and flavors to each of your besties. Sweet Treat Of The Month

on Sunday, January 27, 2013

This year I've decided to be more adventurous in the kitchen and so far it has been a whole lot of fun! Rather than sharing everything I make, I thought I would post my favorite sweet treat of the month... a bit like a baked "pin up"!
So, this January, I'd like to nominate the ridiculously tasty Malted Chocolate Cake. It's a chocolate cake made with Horlicks, that powdered malt drink stuff and it is absolutely to die for. Being so cold and snowing outside, coming home to a slice of this bad boy with a nice cuppa has been a dream! You'll thank me for trying this one :D Enjoy!

Best Of British: Eton Mess Recipe

on Thursday, May 31, 2012

It simply wouldn't be a British summer without an Eton Mess!

Today we thought we would share our favorite recipe for this simple and beautifully messy dessert as it is the perfect combination of strawberries, cream and meringue. Fantastic for a last minute parties and making with kids too; plus if you're feeling like a bake-a-thon you can even make your own meringue!  But for those who love a treat in a tick, here is the recipe without the hassle...

You will need:
a box of meringues
a tub of fresh strawberries, hulled
a rounded tablespoon of icing sugar
a pint of double cream

To make:
Chop up all your strawberries into quarters. Pop half the strawberries into a blender with the icing sugar and whizz until you have a puree. Sieve to get the seeds out and set it asside.
Whip the double cream 'till it starts to go all floppy. Yum yum!
Now you are ready to dish it up :D
Smash your meringues into around 1 inch pieces and place them in a large mixing bowl.
Add in your strawberries, then fold the cream in and around it all.
Add in a couple of spoonfuls of the puree and gently fold to give the mixture a marbled effect.
Spoon into a serving dish, or tea cups like we do, and pour more of the strawberry puree over the top...
Then enjoy!

It really is that simple, that carefree & messy and that tasty!
We hope you give it a try as it is seriously worth the (lack of) effort!
And if you're having an adult's party, you could even add a splash of Pimms to the puree. How very posh! Thank goodness Delia shared this recipe as we don't know where we'd be without it :)
What's your favorite summer dessert?
Is your mouth watering yet?
Mmmmmmm!

Enjoy...

DIY: How To Make Blueberry Pie

on Tuesday, March 6, 2012

It's National Pie Week!
To celebrate we thought we would share our simple and delicious Blueberry Pie recipe...
It's basically the best there is!

All you need for 6 blueberry pies is:

A pack of ready rolled shortcrust pastry
125g fresh blueberries
40g caster sugar
5g plain flour
a pinch of cinnamon
a good squeeze from a wedge of lemon

Ready? Ok...

Pop the oven on at 180 degrees celsius.
Cut out 6 round pie bases and pop them into a buttered muffin tin.
Mix together the sugar, flour and cinnamon.
Add the blueberries and lemon juice and mix until the blueberries are covered in the mixture.
Spoon into the pie bases. If you have any of the flour and sugar left, just sprinkle on the top.
Cut out lids for the pies from the remaining shortcrust pastry. We have made a mixture of classic pie tops and star shapes; be sure to have some fun with it!
Pop the lids on top of each pie and brush lightly with a little bit of milk if you don't want them to brown too much whilst baking.
Pop in the oven for 15-20 mins until golden.
Take them out and let them cool for 5 minutes as they will be as hot as the sun!!

*Ta*Da*
Add some cream and loosen that belt - these are so good you will eat them all in a flash!
They really are the best, right? Just goes to show that you don't need a whole load of fancy ingredients to make the most delicious tasting pie :) Your mum will be proud!

We hope you enjoyed our little recipe...
Happy Pie Week!

DIY: Chocolate and Peanut Butter Cookies For Your Valentine...

on Tuesday, February 14, 2012

Happy Valentines Day!
Today we thought we would share our favorite cookie recipe with you so you can make them for your favorite people :) Valentines is all about spreading the love and what better way than to do that with chocolate and peanut butter? Based on a Lorraine Pascale recipe, these are easy to make and super addictive. You will be everyones best friend when you bring these out!

You will need:
130g butter (room temp)
200g soft light brown sugar
1 egg (room temp)
a few drops of vanilla essence
200g plain flour
1/2 tsp baking powder
1/2 tsp bicarbonate soda
150g peanut butter
100g broken chocolate or kisses...

Preheat the oven to 170 degrees celsius.
Cream together the butter and sugar until fluffy then add egg and vanilla.
Mix well then stir in the flour, baking powder and bicarbonate soda.
Gently stir in peanut butter and chocolate. For best cookie texture, stir peanut butter as little as possible. Get your hands in and get messy if that's easier!
Divide into 14 equal balls and place on baking tray before flattening slightly. These do spread out a lot so make sure you leave plenty of space around them.
Bake for 12-15 minutes until they start going brown.
When you take them out of the oven they will be REALLY squidgy. Leave them on the tray until they are completely cool and firm...

Then get the kettle on and share with your loved ones!
We hope you have a cracking day however you spend it..
*enjoy*
