DIY: Pastel Peppermint Creams Recipe

With Mothers Day only a stone throw away, I thought it would be nice to share a recipe for some yummy and amazing looking Peppermint Creams. I love these as I think they're perfect for Easter and Spring as you can make them pastel coloured and fit in with any party theme. Perfect, right? 
So, without further adieu, here's how we made our Peppermint Creams Confetti!  


What's great about these sweet treats is that they are massively easy to make, so you can get little 'uns involved too. Plus you're probably going to have most of the ingredients at home too, which is always a winner in my eyes!

You will need:
1 egg white
300g icing sugar, (plus a little extra incase you need it)
a few drops peppermint extract 
a few drops of food colouring


Start by whisking the egg whites until their nice and frothy. Then sift your icing sugar into the bowl. Combine the two with a spoon - or if you're happy to get messy, kneed together until you can combine the mixture into a ball. If you find that it's really sticky, sift in a little more icing sugar till the mixture is no longer sticking to your fingers and bowl.


Make a little hole in the ball and add in a few drops of peppermint extract, then kneed tother for a minute or two to ensure the flavouring is mixed in.


I'll be creating my confetti with 3 different colours. Split the ball into appropriate segments and give each one it's own bowl so the colours don't get mixed up. 
One at a time, pop a hole in the top of each ball and add a few droplets of food colouring.  Kneed till the colour is even (unless you want a marbled effect). 
You might find that the recipe goes really wet whilst kneeding in the colours. If you set it aside for a few moments it will harden up again. Take your time during this stage. 
You can always add in a little more icing sugar and peppermint flavouring if you start to panic!


When you're happy with the colours, roll them out into little balls and pop them on a baking sheet lined with greaseproof paper. If you're feeling particularly fancy, stamp out little shapes too :)
Pop them in the fridge over night (or 24 hours if you have them) and you're done!

So pretty, right? And stupidly easy to make :D

The great thing about this recipe is that you can switch the peppermint extract for any other flavour you like (itching to do strawberry next!)
If you chill them for 24 hours you can even dip them in some dark chocolate. Yum Yum!

All you need to do now is pick up a cute tea cup and saucer and you've got an adorable gift for Mothers Day :)

Sweet Treat Of The Month...

Being February and the month of love, something sticky and sweet had to be our pick of the month. Hello homemade Giant Jammy Dodgers! These are actually really easy to make as you just need a solid biscuit recipe, some cute cutters and a jar of your favorite jam. I love these because you can customize the shapes and flavors to each of your besties. Heart shaped strawberry for my mister, star shaped raspberry for my bestie and blueberry OMG ones for a rainy tuesday. Get in!
